Summer on the Go with Vegan Banana Coconut Protein Popsicles

As the sun's warm embrace gently caresses your skin and the gentle breeze whispers through the trees, it's the perfect moment to indulge in a cool, creamy treat that not only delights your taste buds but also nourishes your body. Enter the vegan banana coconut protein popsicle – a delightful fusion of tropical flavors and muscle-building nutrients that will transport you to a serene island oasis, one lick at a time.

Why Choose This?

These popsicles offer a guilt-free and refreshing alternative to traditional frozen treats. Crafted with wholesome, plant-based ingredients, they provide a nutritional boost to support your active lifestyle. The banana and coconut milk offer natural sweetness and a rich, creamy texture, while the vegan protein powder adds a boost of amino acids to aid in muscle recovery and overall well-being.

Best of all, these popsicles are entirely plant-based, making them a delicious option for vegans and health-conscious individuals. No artificial sweeteners, colors, or preservatives – just pure, nourishing ingredients that will leave you feeling satisfied and energized.

What You'll Need

    • 1 ripe banana, mashed
    • 1 cup full-fat coconut milk
    • 1/2 cup unsweetened almond milk
    • 2 scoops of your favorite vanilla vegan protein powder
    • 2 tablespoons maple syrup (or honey for a non-vegan option)
    • 1 teaspoon vanilla extract
    • Pinch of sea salt

How to Make It

    1. Combine bananas, coconut cream, protein powder, and vanilla extract in a blender or food processor.
    2. Blend mixture until smooth and creamy.
    3. Coat the inside of popsicle molds with coconut oil. ( * I used a kitchen pastry brush to coat the insides of the molds with coconut oil).
    4. Next, evenly sprinkle shredded coconut into each mold. Cover the mold with your hand and shake it slightly to disperse the coconut flakes.
    5. Evenly pour popsicle batter into 8 popsicle molds. Place a wooden popsicle stick into the middle of each mold.
    6. Place popsicles in the freezer for at least 6 hours, or until completely frozen.
* Run the popsicle molds under warm water for a few seconds to help remove the popsicles.

As you savor each bite, allow the cool, silky texture to melt on your tongue, and let the balanced flavors of banana, coconut, and vanilla soothe your senses. This is a moment of pure relaxation and indulgence, where you can truly appreciate the simple pleasures in life.

So, the next time you crave a refreshing and nutritious treat, whip up a batch of these vegan banana coconut protein popsicles and enjoy the taste of the tropics in the comfort of your own backyard oasis.
